July 11 Menu

Quote of the night from Anna: “Wow, Mom, you’re cooking really fancy tonight! Making hot dogs in a pot instead of a microwave!”
True, most times I make hot dogs the quick way. But I’m pretty sure I do fancier cooking than hot dogs in a pot! 🙂

Breakfast
Chocolate smoothie
Breakfast sausage

Lunch
Spaghetti squash with meat sauce
Goat milk yogurt with blueberries

Supper
Hot dogs
Veggie chips
Chocolate mousse

Snacks
Watermelon slush
Banana chips

Hotdogs: We buy hot dogs without added nitrates or nitrites. I’m somewhat conflicted over the safety of nitrites, so we eat them in moderation. Tonight we had these ones from Trader Joe’s. Many of the mainstream brands like Oscar Meyer now offer options without added nitrites. (If you have us over for a cookout and grill regular hotdogs, do not worry about it. We will eat them!)

Watermelon slush: Watermelon + ice cubes + juice of 1/2 lime + 1 mint leaf all thrown into the blender. Most recipes say to add sugar. The kids loved it without the sugar.

    • For chocolate mousse, I blend together 1 avocado, 1 ripe banana, and a few tablespoons of cocoa in my food processor. I used to add chocolate chips on top to help the kids like it, but they love it plain now, too. It has more of a pudding texture, but Anna hates when I call food names that don’t really apply, so I had to give it a new name.
